Storing Your Coffee

It is best to buy fresh-roasted coffee in quantities that you will use within seven to ten days. Be careful with this product, as it is one that is volatile and most important to your business success.  It is also best stored in whole bean form until grinding is needed.  Ground coffee goes stale within a few days even under the best of conditions.  Always use good quality, cold water. Brewed coffee is approximately 98% water...good water quality is essential.

Like Chocolate, there are popular misconceptions on the way roasted coffee should be stored and maintained. The enemies of roasted coffee are moisture, air, light, and heat. Storing your coffee away from them will keep it fresher longer. Therefore, an airtight container stored in a cool, dry, dark place is the best environment for your coffee.

Do not store your coffee in the refrigerator or freezer.  Coffee is porous and if given the chance, coffee will also absorb other aromas from your refrigerator or freezer like the smell of onions or garlic.  Coffee beans must be treated much like a good dark chocolate.  At about 70 degrees and out of direct sunlight. The primary cause of flavor loss after brewing is continuous heating. Once brewed, coffee held in uncovered, heated containers (a glass pot on a warming burner) will retain the best freshness for no longer than 30 minutes. Continuous heat will break apart the organic materials, and the coffee will develop a not so fresh taste with smoky overtones.
